Addicted: Pork Chimichurri

I saw this sandwich on Anthony Bourdain's No reservations show when he went to rio. I had to make it the next day, and now we have eaten in TWICE in a row and are TOTALLY addicted. So savory and delicious.


I bought a 2 pack of Pork shoulder roasts from winco for like $6. Freeze one for later.
Sprinkle pork with salt pepper and cumin. Drizzle with a tad of olive oil. Bake covered at 350 for 2 hours
Remove from heat and let sit for at least 20 mins
Slice into thin slices



Chimichurri Sauce:
1 bunch of parsley chopped very fine
1T dried oregano (if you can find fresh use it, but its hard to get in the winter here!)
2 T minced roasted red peppers (from a jar)
2 minced garlic cloves
1 seeded minced jalepeno
1/2 medium onion minced very fine
1/4 cup red wine vinegar
1 tsp salt
1 tsp black pepper
juice of 3 limes (about 3 T)
1 cup olive oil
* chop vegis very very fine like a salsa, add oil last. stir well and let sit at room temp for a day if you can. This salsa gets better and better as it sits!

FOR PORK SANDWICHES:
Brown buttered french rolls under broiler
Top with shredded jack cheese
Lay slices of pork over cheese
Top Pork with Chimichurri sauce

FOR TACOS
Flash fry corn tortillas, set aside on paper towels
shred cooked pork (baked with salt pepper and cumin)
Layer tortilla with shredded pork, shredded cheese, lettuce, and chimichurri sauce

***Serve with limeade if you can! ****
