Are you sick and tired of wrap recipes?! Sorry - they are too delicious! I keep making them!<br />

Ingredients:<br />
<br />
3 large chicken breasts cook and cubed<br />
1 large 7oz can whole green chiles (or diced)<br />
1 14 oz can of quartered artichoke hearts (be SURE to not get marinated ones)<br />
Bag of Don Pancho whole wheat low carb tortillas (or your preferred wrap - next time Ill use the smart and delicious spinach wraps)<br />
6 oz (3/4 brick) greek yogurt cream cheese<br />
1/2 cup shredded part skim mozzarella cheese<br />
1/2 tsp garlic powder<br />
just a<i> dash</i> of cumin<br />
salt and pepper to taste<br />

Combine everything and roll up into 8 wraps. Heres a trick Ive been using - I store my wraps in the tortilla bag in my freezer! Just pull one out and defrost for a minute in the microwave, then toast in your oven til heated through and crispy (about 4 minutes)<br />

2/3 cup chopped shallots (can sub 1 large onion)<br />
3 garlic cloves minced<br />
1/4 cups water<br />
2 cans 28 oz crushed tomatoes with basil<br />
1T oregano<br />
2 T brown sugar<br />
1tsp salt ( or more to taste)<br />
1 1/2 cups fat free half and half<br />
<br />
In a large pot saute shallots and oregano, salt, and sugar with 1/4 cup water until tender (5 minutes). Add garlic and saute until water is gone.<br />

Add 1 can tomatoes, puree everything with hand blender<br />
Add the other can of crushed tomatoes<br />
Add half and half<br />
<br />

OK, so we're a little obsessed with wraps lately. They are easy to assemble and freeze, great for grab and go, and best of all HEALTHY AND FILLING! I accidentally started eating all of Gabes breakfast wraps, so I figured I better make some dinner versions! Gabe and I both gives these 2 thumbs up. Seriously - they are good!<br />
<br />
Ingredients:<br />
3 cooked shredded chicken breasts<br />
1 can of mixed beans (3 bean blend, I bought the organic kind from fred meyer for $1)<br />
1 small 14 oz can diced tomatoes<br />
1 bag reduced fat mexican cheese blend (also at freds for $2 - its made with 2% milk)<br />
2 bags of smart and delicious wraps - I bought tomato basil flavor<br />
1/2 brick of greek yogurt cream cheese<br />
<br />
In a large bowl, microwave cream cheese until soft. Drain beans and tomatoes very well (or your burrito will be runny) and stir together with cream cheese. Stir in bag of cheese and shredded chicken. ** Next time I will also add 1 cup of cooked brown rice<br />
<br />
Fill wraps with filling and roll up in foil. Freeze.<br />
To heat just defrost in microwave for 1 minute and toast in oven until the shell is crispy!<br />

8 low carb wraps/tortillas<br />
1 lb lean turkey sausage<br />
1 bag weight watchers cheese blend<br />
2 cups frozen hashbrowns<br />
2 whole eggs + 10 egg whites<br />

In a large skillet brown and crumble sausage. Then scramble eggs, and cook hashbrowns. Add the cheese to the mixture and scoop two large spoonfuls onto each tortilla. Roll individually in tin foil and freeze.<br />

To eat - defrost in microwave for 1 1/2 minutes. Then place in oven directly on rack at 400 degrees for 5 minutes. Burrito will be heated through and crispy!<br />

Dip in salsa and enjoy!<br />

This is a beal family special. Strange at first... And then terribly addicting! Even my kids will eat lettuce thanks to this recipe! A great way to sneak in a ton of veggies!<br />

1/2 <br />
head of lettuce chopped small<br />
1/2 head cauliflower chopped small<br />
2 diced tomatoes<br />
2 carrots chopped small<br />
1 large avocado diced<br />
2 green onions sliced<br />
I can olives sliced<br />
1 can kidney beans<br />
1 cup part skim mozzarella shredded cheese<br />
2 chicken breasts<br />
1 packet taco seasoning<br />
Nacho Doritos<br />
Light Ranch dressing<br />
<br />
Cook and shred chicken. Add taco seasoning with 3/4 cups water and simmer briefly.<br />
Combine chicken and all salad ingredients. Toss until well combined. Serve with crushed Doritos and light ranch dressing. Enjoy!<br />

Another healthy dinner that was a winner!<br />

4-6 Tilapia Filets<br />
1T Paprika<br />
1T Garlic powder<br />
1T Oregano<br />
1 tsp Salt<br />
1/2 tsp Pepper<br />
1 Avocado peeled and sliced<br />
* Sriracha sauce is optional<br />

Rinse and pat dry fish filets.<br />
Combine spices in a bowl<br />
Spray frying pan with cooking spray<br />
Sprinkle fish with spice mix<br />
Fry in pan on each side for about 2-3 minutes, spraying with cooking spray as needed to prevent sticking. Edges will be brown and crispy, inside turns from translucent to white.<br />
<br />
Top tilapia with sliced salted avocado on top, with a side of rice, and sriracha sauce to dip in.<br />
Could also be served on a bed of spinach!<br />

Gabe is trying to shed some poundage so I have been cooking light. This recipe is super easy and tailored to Gabes picky chili standards. It takes a whopping 15 minutes to make and has basically NO fat and is very filling.<br />
<br />
Ingredients:<br />
1 pound of very lean ground turkey<br />
1 onion<br />
3 cloves of garlic<br />
1 small can chicken broth (can use vegetable or beef also)<br />
1 large can of diced tomatos<br />
1 can kidney beans<br />
1/2 cup water<br />
1T oregano<br />
4 T chili powder<br />
1 tsp cumin<br />
1T hot sauce ( I used buffalo sauce)<br />

Method:<br />
Brown and crumble Turkey. Season with Salt and pepper. Set aside.<br />
In a soup pot toss in 1/2 cup water, onion, garlic, tomatoes, hot sauce, and spices. Cook on high for 15 minutes or so, until very thick and onions and garlic are very soft. Dump in Chicken stock. Using a hand blender, puree until smooth. Salt to taste. Dump in cooked turkey and kidney beans.<br />
<br />
Heat on warm in crockpot until ready to serve.<br />
*Can top with shredded cheese, sour cream, and crumbled tortilla chips.<br />

** You can easily make this vegetarian by eliminating the turkey and adding in carrots, celery, and even spinach before pureeing. INSTRUCTIONS</h3>

<li style="list-style: decimal inside; margin: 0px; padding: 0px;">In a small bowl, combine mayonnaise and miracle whip.</li>
<li style="list-style: decimal inside; margin: 0px; padding: 0px;">Cut Rolls in halves. Spread mayonaise-miracle whip mixture on each side of the roll. Place a piece of honey ham and Swiss cheese on one half of each roll. Fold back into sandwich form.</li>
<li style="list-style: decimal inside; margin: 0px; padding: 0px;">Place rolls close together in a greased 9x13 pan until pan in completely full.</li>
<li style="list-style: decimal inside; margin: 0px; padding: 0px;">Mix together all ingredients of Poppy Seed Sauce. Spread evenly over the tops of all the rolls. *NOTE* I did not use all the sauce. Let the rolls set until the butter has set up a bit. Cover with aluminum foil and Bake at 350 for 12-15 minutes.</li>

Here is my easy "cheater version" of Cafe Rio pork. The original knock off recipe requires you to marinate the pork overnight. Aint nobody got time for that!!! This keeps things easy.<br />
<br />
In the oven at 400 degrees bake:<br />
salt and peppered 4 pounds of pork roast<br />
2 chopped garlic cloves<br />
Enough coke to almost cover the roasts in a 9x13 (probably 2-3 cans)<br />
<br />
Bake for 3-4 hours or until pork starts to shred easily with a fork<br />
<br />
Remove roasts and discard liquid.<br />
<br />
Shred pork and put back in 9x13.<br />
<br />
Make this sauce:<br />
In a blender or with a hand blender combine:<br />
2 cups brown sugar<br />
2 cups of coke<br />
2 cans of green chiles<br />
21 ounces of red enchilada sauce ( 1 1/2 small cans)<br />
<br />
Cover shredded pork with sauce and bake at 350 for 2 more hours.<br />
Serve with Cafe Rio rice, Cilantro ranch dressing, lettuce, cheese, black beans, or any other burrito toppings you like! (see recipes below)<br />

I usually always have these ingredients In my pantry on hand. And I like these tacos. Because they are healthy, not spicy, and my kids and people who don't really like Mexican food always eat them.<br />

Bake and shred chicken. While hot sprinkle 1/2 the ranch packet on the chicken. Stir until chicken is coated and absorbs the powder.<br />

I usually rub some ice cubes along the sides of the pan or pop the entire pan in a sink full of ice cubes to cool the mixture down because this step can take forever. This step is really important because if the mixture is too hot, it will kill the yeast.</div>

Why should you beat your eggs first? Same reason you should combine your dry ingredients before adding them to moist ingredients when making cookies and cakes–it ensures everything is well-mixed and can be evenly-distributed through your dough or batter. Pour the batter into a well greased 11''x17'' sheet pan. Bake for 20-25 minutes or until the cake springs back when lightly touched or a toothpick inserted in center comes out clean. Remove cake from oven and allow to cool slightly while you make the frosting. Put the butter and milk into a medium saucepan. Heat until butter is melted and bring to a simmer. Remove from heat and stir in the powdered sugar, vanilla and a dash of salt. Whisk until completely smooth. Add nuts (if desired) and spread over cake. </span></div>

I had to make it the next day, and now we have eaten in TWICE in a row and are TOTALLY addicted. So savory and delicious.<br />

I bought a 2 pack of Pork shoulder roasts from winco for like $6. Freeze one for later.<br />
Sprinkle pork with salt pepper and cumin. Drizzle with a tad of olive oil. Bake covered at 350 for 2 hours<br />
Remove from heat and let sit for at least 20 mins<br />

Chimichurri Sauce:<br />
1 bunch of parsley chopped very fine<br />
1T dried oregano (if you can find fresh use it, but its hard to get in the winter here!)<br />
2 T minced roasted red peppers (from a jar)<br />
2 minced garlic cloves<br />
1 seeded minced jalepeno<br />
1/2 medium onion minced very fine<br />
1/4 cup red wine vinegar<br />
1 tsp salt<br />
1 tsp black pepper<br />
juice of 3 limes (about 3 T)<br />
1 cup olive oil<br />
* chop vegis very very fine like a salsa, add oil last. stir well and let sit at room temp for a day if you can. This salsa gets better and better as it sits!<br />

Creamy Chicken Noodle Soup (this is the original recipe but I always add TONS of veggies and I make a huge pot so make it to your liking. And no, I didnt use fresh rosemary either.)</div>
<br />
2 qts chicken broth<br />
1 cup chopped carrot<br />
1 cup chopped celery rib<br />
1 head of cauliflower chopped<br />
1 onion<br />
1/4 c butter<br />
1/4 c flour<br />
1 c. canned evap milk<br />
2 c chicken, cooked, shredded<br />
1 T fresh rosemary, chopped<br />
1 t dried thyme<br />
salt/pepper to taste<br />
Homemade noodles<br />
<br />
In a pot bring chicken broth to a boil. Add vegetables and simmer till veggies are tender. Remove veggies to blender and process till smooth and return to chicken broth. Or, easier, use your hand emulsifier(boat motor). Set aside.<br />
In a lg pot melt butter, do not let brown. Stir in flour and cook till paste forms. Whisk in evap milk till very thick. Slowly pour in chicken/veggie broth mixture and continue whisking till smooth. and seasonings. Bring soup to a slow boil and add noodles cook stirring occasionally. When noodles are cooked add chicken. Serves 6-8<br />

Homemade Egg Noodles ( I really like to use these and they are not hard but to save time use store bought pasta. I love country style homemade ones..you know.)<br />

1 egg<br />
1-2 T milk<br />
dash salt<br />
